Our Crazy Busy Summer....AKA Preserving the Harvest

It has been more than 2 months since I last had time to blog.
Please forgive me.....AGAIN
  So today, I thought I'd share with you what has been keeping me from blogging!
I'm telling you,
I have been crazy busy!

Maintaining our garden
as well as our family relationships has been challenging to say the least. We are still going back and forth between our country home on weekends and our city digs during the week.
2 homes in 2 states is just too MUCH!
  Of course, my heart is AlWAYS at HOME!
I'm a country girl at HEART!

Even though we couldn't watch over the garden as diligently as we would have liked, we managed to harvest quite a bit of goodness to fill our freezer and pantry!

Zucchini Bread!!!

We had a pretty nice strawberry harvest this year.
I froze many of them, after we ate our fill, of course.
I also made a small batch of jam.  We are not big jam/jelly eaters, because of the sugar.  But the grandkids always have to have pbj's when they come over.  I personally don't like the taste of pectins in jam.  I have made pectin-free jam before by literally cooking the jam to death over the stove.
But here is a trick worth sharing.  I happen to have this high end bread machine that makes pectin-free jam, and it does all the work.
Really! it has a jam setting!  I bought this machine a long time ago for baking bread after my old welbilt machine died.  However, I rarely, if ever bake bread in it.  Usually, I just mix the bread in the machine and then bake it in my own pan.  But this jelly setting is SWEET!

 When the jam was finished,
I put it into hot jars and gave it a water bath.  Wala!

 We had quite a few wild black berries on the homestead.  I made a few more jars of bread machine jars of blackberry jam and I made some blackberry vinegar! This is going to make a yummy vinaigrette.

preserving herbs is a never ending job!

I have found that there isn't a better place to bond than in the garden.  This is true for grand kids as well.
This boy is quite the foodie.
His mama has introduced him to lots of veggies.  He will try almost anything.

 After spending the morning in the garden, we made lunch with all the goodies we picked.  He had beans, zucchini, fresh potatoes and kale chips.  Also, he requested some pickled beets.  He loves pickled beets!  Crazy, I know for a 5 y/o to request beets.  Of course he had watermelon for dessert.  He was one happy boy.

We were able to spend some time swimming and picnicking with kiddos on weekends.  So much fun!
Check it out......3 more reasons why I don't have time to blog!

The Good news is....
I'm home right now.
I'm trying desperately to get all our food put away.
Right now, I'm up to my elbows in tomatoes.  I usually can tomato juice, tomato sauce and salsa.

 This year, I'd like to give ketchup a try.  I'd like to find a recipe that i can pass off as store bought.  If you could help me out with this, I'd be forever grateful!

Until next time....
Keep it Simple.....

Thoughts on Christmas

Christmas Greetings!!!

Like many of you, our Christmas celebrations are under way!

We kicked off the holiday season with a wonderful Christmas celebration at our church.  Music is a great way to get you into the Christmas spirit- don't you think?

 We had our get together with Hubby's family over the weekend.  We certainly had a house full of
chow, chatter and children!

Over the years, I have made a lot of interesting gifts,
all in the name of fun- of course.
Many have fallen under the title of re-purposed, recycled and even
Redneck

This year, I conjured up some new ideas.
Each of the girls received one of these lovely blue Ball jars with the pump.

AND

some lovely brooches made from the cans of their favorite beverages!

These precious jewels
 may not look like much to you,
but I have to tell ya, every time I wear my
Arizona Tea brooch
on  my jean jacket I get comments!
Good comments!

With the big family gathering behind us,
I am looking forward to our Christmas Eve traditions.
The kids will be here, with the grand kids in tow.

Little Jack is really looking forward to opening some presents.
He is so excited he can't stand it!
It's going to be fun!

I have to tell you....
This year I'm feeling extra blessed.
Yes, there is a wonderful present under the tree for me that I can't wait to get my hands on :)

Okay, I confess......I already tried it out, but don't tell Santa!

But that's not the reason I'm so blessed....
While driving the other day, I saw a festive military type banner in someone's yard that read,

WELCOME HOME

When I saw it, tears flooded my eyes.
What Joy they must be feeling as they welcome their spouse, or son or daughter home this holiday season.

And about 2 seconds after seeing that sign,
I heard the gal on the radio talking about a dear friend of hers who is preparing to say good bye to her 18 year old daughter.
 This young girl had been dealing with cancer for 15 years.  And now, just days before Christmas,
she was preparing to say good bye.
She said that as the reality of it all was settling in she collapsed into a chair and cried out to God, " I can't do this!"

And God responded with, "you can't, but I can!"

And then of course, I wept some more!

I know first hand the power and the truth of that statement.

On this Christmas,
I'm thankful that I don't have any children
 fighting a war in a foreign country.
I'm thankful for the health of my family....
especially my own.

 This March, I will be celebrating 10 years of remission!
AND WE WILL CELEBRATE!

I'm feelling especially thankful.
It's a thankfulness, deep in my gut.
One, I really can't rightly express.

The last few Sundays, our pastor  has been speaking  on the
Meaning of the Manger.

He wrapped it up this Sunday by sharing that it is our responsibility to
fully follow and fully worship the (newborn) King.

And I have to say, it's when we have felt forsaken
lonely
sad
and totally empy
and we have nothing but our worship to give..
that my friends is when we really get to know that baby in the manger.

Little Rhea came running to me
the other day shouting,
"Gwamma, I found Jesus!"

This Christmas, you may be feeling thankful or joyful.
Or this year, you may be dealing with some heavy burdens.
Regardless of your circumstances...
may I encourage you to...

Fully follow and fully worship the new born King.

Wishing you a very Joy filled Christmas...

From our house to yours!

Gratitude in the Last Days of Autumn

Okay, so I know winter doesn't officially begin until late December. I'm not trying to rush the seasons.  But around here it feels like winter is rapidly approaching.

On my last post, I told you we were preparing for Sandy.  I'm happy to report that while she blew directly over us, she didn't leave behind a lot of  destruction.
She did however, give us more than 5 inches of rain in our gauge!
 (Prayers for those who were not as fortunate!)

Before the hurricane,
we (me and the grandbabies)
had been enjoying  autumn.....
especially the swing set!

We gathered nuts...

Jack was totally into cracking nuts! It kept him busy for quite a while!

Concentrating!

The kids played on Pap Pap's tractor....

 We foraged our way through the garden and fed the chickens..

Chickens love turnip greens!

Did you know that chickens can jump?
Oh yea!

What a sweet face

Goodies of kale, beets, chard, oregano, cabbage and can't forget the eggs!

We carved Jack -o-lanterns with Great Grandma..

Jack helped to "gut" the pumpkins

Creating the eyes and nose
with cookie cutters and a hammer.

Admiring his work

I'm not sure who had the most fun!

We celebrated Jack's 3rd birthday with a bonfire..

Playing in some corn.  Who knew that could be fun?

Can anyone say Uncle BUBBA!

Andrew and Ashley

Jack's mama made
camping cupcakes.
Cute huh?

The face says it all!

~~~~~~~~~~~~~~~~~~~~~
Post Sandy,  there aren't many leaves remaining..
the ugly brownness of winter is approaching...
I knew it was coming..
I admit that I don't like it....
not one little bit!!
But I shan't complain.
During this month
when we celebrate Thanksgiving,
I am reminded that I have so much to be thankful for,
 and though winter is calling louder each day,
I shall focus on the good things in my life.....
for they are many!
 Be thankful in all circumstances,
for this is God’s will for you who belong to Christ Jesus.
1 Thessalonians 5:18
